Easy, healthier chicken nuggets, made in a flash!
Ingredients
2 Cans Chicken (12.5 oz)
1/2 cup freshly Shredded Cheese of choice
1/4 cup + 1 Tbsp Grated Parmesan
2 Large Beaten Eggs
1/2 - 1 tsp Ground Black Pepper
1 - 2 tsp Seasoning(s) of choice
2 - 4 dashes Hot Sauce of choice
Instructions
Transfer completely drained canned chicken to a large mixing bowl and shred up with a either a fork or a pastry cutter. OPTIONAL STEP: add a tbsp of pickle juice to your mix for extra flavor.
Add in beaten eggs and mix in to the shredded chicken and then add your pepper, seasoning(s) of choice, and hot sauce. Stir until well mixed. Fold in the Parmesan cheese, and desired shredded cheese (use a soft shredded cheese like mozzarella, but it does not have to be mozzarella).
Form your mixture into individual nuggets using your hands, using about 1.5 - 2 tablespoons of the chicken mixture for each nugget.
Grease an air fryer basket with non-stick cooking spray. Place a single layer of uncooked chicken nuggets into the prepared basket - be sure they're not overcrowded in the basket and not touching their lil nugget neighbors.
Air fry at 375° for 5 minutes, gently flip, and air fry for 5 minutes longer.
Serve immediately with your favorite nugget side and dipping sauce.
