This is an easy and delicious chicken recipe made with ease in your Instant Pot. Prepared, this chicken can be shredded and eaten on its own, or added atop a delicious salad, into tortillas for tacos, a burrito, or with cheese in a quesadilla - the possibilities are many!
Ingredients
2 lbs Boneless Skinless Chicken Breast or Thighs
7 oz Herdez Salsa Ranchero (or desired salsa)
7 oz can Chipotles in Adobe Sauce
1/2 cup of Water or Chicken Broth
1 packet of Taco Seasoning or Burrito Seasoning
Instructions
Into your IP, place your chicken, then top with your salsa, can of chipotles with all its contents, water and add your burrito seasoning.
Give a little mix so your chicken is covered with your sauce mixture and seasonings.
Lock on your IP lid, set yout your valve to sealing, and set to Manual cook for 5 minutes.
Allow the IP to do what it does. After it's come to pressure and your 5 minute cook time has completed, give another 2 minutes, then carefully quick release your IP, using a wooden spoon with towel to shield from getting burned.
Once pressure has fully released, open your IP lid facing away for steam to exit away from you.
Let chicken rest another 8 minutes or so, then shred with a shredding spatula or 2 forks, or your desired shredding method.
Enjoy your chicken on its own, in tortillas for tacos, burritos, or quesadillas, on a salad, and more! Be sure to save the birria-like sauce for dipping - it's yummy!
