As I get back into regular check ins with my Dietitian, eggs continue to be a huge part of my everyday meal planning.
Egg Bites/Quiche is a super easy way to not only incorporate eggs into my daily food intakes but also allows for a delicious meal, and not just simply eggs!
I found these egg bite/patty silicone molds on Amazon, that are perfect for making my breakfast meal prep as simplified as possible, and this recipe can be easily made into egg patties OR a traditional (crustless) quiche.
Bacon Spinach Egg Bites/Quiche Recipe
Ingredients
1 cup spinach — chopped, slightly thawed from frozen
1 cups cottage cheese
1 cup shredded cheese of choice
3/4 cup real bacon bits, or cooked chopped bacon
10 eggs
Instructions
Preheat oven:
For egg bites/patties, preheat oven to 325°F
For traditional (crustless) quiche, preheat to 375°F.
In a mixing bowl, combine all ingredients thoroughly.
Prepare to bake:
For egg bites or patties, oil your baking tin or silicone tray to avoid egg mixture from sticking to it.
For traditional (crustless) quiche, oil your quiche tin or silicone dish to avoid egg mixture from sticking to it.
Bake:
For egg bites or patties, bake at 325°F for 25-30 minutes — cook time will vary and you may need more or less time depending on your specific oven or baking mold — check on your dish about 20 minutes in to ensure eggs are no longer raw). You’ll know your bites/patties are done when you can stick a fork in the middle and it comes out clean.
For traditional (crustless) quiche, bake at 375°F for about 35-45 minutes— cook time will vary and you may need more or less time depending on your specific oven or baking mold — check on your dish about 30 minutes in to check cooking progress — You’ll know your quiche is done when you can stick a fork in the middle and it comes out clean.
Let sit a few minutes before cutting. Serve and Enjoy.
