This Instant Pot Country Sausage Gravy starts with sizzling pork sausage and a packet of Pioneer Country Gravy Mix, turning a classic Southern favorite into a stress-free, crowd-pleasing breakfast. It’s thick, rich, peppery, and full of flavor — the kind of dish that makes weekend mornings feel special.

IP Country Sausage Gravy w/ Air Fryer Frozen Biscuits
Ingredients
1 lb pork breakfast sausage (mild, hot, or sage)
1 packet Pioneer Country Gravy Mix
2 ½ cups water (per gravy packet instructions — you can sub milk or half & half to make it a more creamy consistency)
½-1 tsp black pepper
Optional add-ins:
¼-1 tsp garlic powder or onion powder
Dash of Worcestershire sauce or hot sauce for flavor pop
Pinch of smoked paprika for color and warmth
Instructions
Step 1: Brown the Sausage
Set your Instant Pot to Sauté (Normal).
Add in the pork sausage and cook, breaking it up into small crumbles.
Once browned (about 5–7 minutes), drain excess grease if there’s more than 1–2 Tbsp.
Optional step: Stir in butter for richer flavor.
Step 2: Mix the Gravy
In a separate bowl or measuring cup, whisk the Pioneer gravy mix with the 2 ½ cups of water, milk OR half & half, until smooth - this step prevents clumps once it hits the hot pot.
IF adding in extra seasonings like pepper or garlic or onion powder, and/or paprika or Worcestershire sauce, whisk this in as well.
Step 3: Combine & Cook
Pour the gravy mixture into the Instant Pot with the browned sausage.
Stir well to combine.
Switch to Sauté mode to LOW and cook for 3–5 minutes, stirring constantly, until thickened - It will start thin and thicken quickly once hot — keep a close eye during this process.
Once it reaches your desired thickness, press CANCEL to stop cooking.
Step 4: Season & Serve
Stir in black pepper and any optional seasonings.
Let rest for 3–5 minutes — it will thicken more as it cools slightly.
Serve over warm biscuits, hash browns, or breakfast potatoes.
Pro Tips
If it gets too thick, add a splash of milk to loosen it.
If you like creamier gravy, use 1 cup milk + 1½ cups water instead of all water.
To make ahead, store in the fridge up to 3 days and reheat with a bit of milk added.
